
Spinach and Beetroot flavoured mix vegetable appe

Ingredients -
- Idli batter - 1 cup each for spinach and Beetroot flavoured appe.
- Finely chopped mixed vegetables(onion,carrot,tomato,capsicum,cabbage, green chillies)-3/4rth cup each for both varieties.
- Ghee for greasing.
- Green gram dal-1/2 bowl
- Sambhar powder-2 spoons
- 1 onion & Tomato each for sambhar.
- 1&1/2 spoons each of Oyecurry's spinach & Beetroot powders.
- Salt to taste
Procedure -
- Take idli batter in two separate bowls,mix the powders respective bowls.
- Add salt and mix the finely chopped vegetables and turn the batter with light hand to mix the ingredients.
- Grease the preheated appe pan with ghee.
- Pour mixtures in the appe shots and cover them and let it cook for 2 minutes on medium to low flame.
- Then grease again on top with ghee and turn appes upside down with help of knife/spatula.
- Let cook and toast untill light golden brown on both sides.
- Prepare sambhar with green gram dal(without skin) with tomato,onion and garlic along with tamarind pulp nd sambhar powder.
Temper it with mustard seeds,asofoetida curry leaves.
Serve the crisp and hot appe with piping hot sambhar!!!
